In this sultry weather, everyone is wishing to feel hydrated, cool and rejuvenated. Each one of us has craving with-in to have refreshingly cool and healthy diet all the time. So here is one recipe including some refreshing, cool, and hydrating ingredients full of moisture and anti-oxidants.
It is Tricolored Raita or Beetroot-Cucumber-Tomato Raita including all three colored ingredients in the form of salad with yogurt dressing. Though it is a bit different from Raita as raita includes a heavy amount of yogurt containing a single raita ingredient topped with tempering. But I wanted my all three freshening ingredients to be flared out distinguished in presentation, I kept yogurt to lesser. And included no tempering because I didn’t want any oil intrusion in healthy course that’s why it was sidelined.
Trying it to be more healthy I opted for low-fat yogurt that was prepared at home only with skimmed milk, which is a low-fat milk. Raita-s are flavorsome and refreshing accompaniment for main-course meal and they best pair up with biryani-s or Pulav-s. They also taste good with flat breads and makes a vitalizing start to the day as breakfast. In this Tricolored Raita you’ll find fusion of three raita-s together; Beetroot Raita, Tomato-raita and Cucumber Raita. Three-in-One Raita, three tastes together. Beetroot-1 medium (grated)
Cucumber-2 small (grated)
Tomatoes- 2 small (finely chopped)
Yogurt- 2 cups
Cumin Powder- 1 and 1/2 tsp
Paprika Powder- 3/4 tsp
Sea salt- to taste
Steps to follow-
1. In a separate bowl, mix cumin powder, paprika powder and salt in yogurt and beat it well.
2. Now in a serving bowl, spread the base layer of grated beetroot followed by some yogurt that has to be poured all over beetroot, just to drench it slight (don’t overdrench), now spread layer of cucumber and again pour yogurt mixture in the same manner. Do the same for tomato layer.
