Here is the main dish or one pot meal, Cilantro lime fried rice I was referring in the post of Hariyali Aloo Chaat that can help you using your cilantro/coriander in another delicious form. I got to know about Cilantro Lime Rice on Chef In You whose Cilantro Lime Rice was inspired from Chipotle style. I also thought to give a try to this simple Rice dish with just few ingredients. But for this also I just didn’t go simply with the original recipe and made some adaptations I wanted to include in my rice according to my palate choice.
I forwarded with cooking it as fried rice using the leftover rice of lunch I had during evening time. I cooked this Cilantro lime fried rice as evening meal. Gave an interestingly delicious twist to it including cumin seeds & green chilli as add-on ingredients in very minor quantities besides cilantro & lime . Assuming flavor of jeera rice tempted me to do so, hence added cumin seeds. To make it whole one pot dish requiring no accompaniment, I chose to add another flavor, spiciness (a bit of it) with one small green chilli (according to my rice quantity). Both were in small portions but were enough enhancing the flavour of rice with dominating cilantro & lime flavours. Finally after cooking, having a bite of this fried rice it came out delicious in just few minutes & just with an easy & simple recipe. You can serve it with any peppery chutney/dip, pesto or salsas. Here in the pic, a bowl of raita is lying beside but I felt no need to pair it with the rice. The fried rice itself is tarty-tangy, also has a bit peppery taste with coriander flavor that you won’t feel the need of any pairing side.

Cooked Rice- 1 cup (1cup measure of 250ml) ( you may use regular or basmati too)
Cilantro/Coriander leaves- 2 tbsp roughly chopped (1tbsp=3tsp=15 ml))
Lime juice- 2 tsp (1tsp=5ml)
Cumin Seeds- 1/8 tsp
Green Chilli- 1 small (finely chopped)
Salt- to taste
Oil- 2 tsp
Steps to follow-
- Heat oil in a skillet; add cumin seeds & let them crackle.
- Add in green chilli and sauté just for few seconds on medium flame.
- Then mix in cooked rice followed by cilantro and lime juice. Stir cook only for about one min or less.
- Take out and serve hot.
